I’ve been in the same boat trying to mirror my iPhone screen to my Fire TV Stick. After testing quite a few apps, I highly recommend checking out DoCast Screen Mirroring. It’s super straightforward and actually works pretty seamlessly with AirPlay.
Why DoCast?

I tried a bunch of other apps like AirScreen and AllConnect, but they either had too many ads, connection issues, or just straight-up wouldn’t work consistently.

One quick tip - make sure both your iPhone and Fire TV Stick are connected to the same Wi-Fi network. Found that out the hard way after pulling my hair out when I couldn’t get it to work initially.
